This is a delicious, creamy and warming soup that is perfect for Fall and Winter!
Soup Ingredients:
- 6-7 cups chopped sweet potatoes (I leave skin on)
- 1 onion, chopped
- 3 Tablespoons fresh ginger root, chopped
- 1 apple, cored and chopped (I leave skin on)
- 2 Tablespoons olive oil
- 8-10 cups vegetable broth (of choice), I use Rapunzel’s.
- 1/2 cup red wine (optional)
Garnish:
- Cilantro leaves
Directions:
Put all ingredients in a pressure cooker and cook for about 20 minutes. Put soup, in batches, in a blender. Cover top with a towel if there is any chance of soup leaking out of top. Serve hot with cilantro leaves.
If you don’t have a pressure cooker, cook for 45 minutes in a pot over medium heat.
Serves 6.
